Chimney Cake Mix & Frozen Dough
Anyone selling chimney cake professionally needs a dough base they can rely on, batch after batch. We offer two solutions built on the same recipe: a professional chimney cake mix and our pre-portioned frozen dough. Both start from an original Transylvanian recipe that we have perfected for different oven types.
This article explains exactly how each product works, how they differ, and which one fits your operation better. Because the choice between chimney cake mix and frozen dough is not about quality — it is about your business: your staff, your space, and how many locations you run.
An original recipe, perfected in practice
Before we get to the two products, what matters is where both come from: an original recipe from Transylvania, the birthplace of chimney cake (Kürtőskalács). We did not invent a lab formula. We started from the authentic recipe and perfected it over years, with one clear goal: that it works on all oven types, keeps its quality consistent, and is easy to work with.
The decisive difference is that we do not test on paper. With over 16 years of experience in the field, we test every formulation day after day in our own shops, under real operating conditions. Every change we make goes through those same real locations until everything is 100% right — only then does it reach our B2B customers. When you buy from us, you are not buying a theoretical recipe, but one validated in real sales, day after day.

Product 1: The chimney cake mix (dry mix)
Our mix is a professional dry mix, not a bag of flour with a few flavourings. It is built from 3 premium flours, each with its technical role — structure, elasticity and correct baking behaviour — plus 14 carefully dosed ingredients. Together they reproduce the taste, quality and look of the original product.
On site, the process is simple and controlled by you: you add water, yeast and oil, knead, let the dough prove, wrap it and bake. Because the recipe and dosing are already solved in the mix, you need no baker’s know-how and are not dependent on a local flour that varies from region to region.
What the mix gives you
Consistent quality, batch after batch: the same premium flour and the same dosing every time, no matter who works the shift. Exactly calculable yield: a 12 kg sack gives you about 110–120 chimney cakes — you know your unit cost from the start. Zero raw material loss: unsold, prepared dough can be chilled and reused. Flexibility on site: you prepare as much as you need, when you need it. No baker’s know-how required — the recipe is already solved. On request we offer training and support, plus our know-how from over 16 years.
The mix is the right choice if you want to control the process on site, have work space for kneading and proving, and value the flexibility to produce at your own pace. Its main advantage is cost: the ingredients per unit are cheaper than with frozen dough. In return, it means more manual effort — at high sales volume you need extra staff, and correct preparation requires training: incorrect kneading or proving can spoil whole batches of dough.
Product 2: The frozen dough (pre-portioned strands)
The frozen dough starts from exactly the same mix — but with the most important part already done professionally. We produce it directly in the factory: the dough is kneaded, goes through the first proving phase (30–60 minutes), and is portioned and frozen. What you receive are ready-formed, standardised dough strands that you store frozen.
To understand the advantage correctly, you need the two proving phases. Phase 1 (30–60 min) is the main proving — the step that gives the product its airy structure and consistent quality. Phase 2 (about 20 min) happens after the dough is wrapped on the roll, just before baking. With the mix, both phases happen on site. With the frozen dough, we handle Phase 1 professionally in the factory — hence the airy, equally good chimney cake every time — and all that remains for you is: thaw, wrap on the roll, Phase 2 (~20 min), bake, sell.
That is the real difference from the mix: you do not „skip proving“, you exclude exactly Phase 1, the most important and most delicate one. It is already solved by us, under controlled conditions.

What the frozen dough gives you
Identical weight on every piece: each dough strand is portioned in the factory to exactly the same weight. In manual production, without experience it is easy to place a strand of 200–230 g instead of, say, 164 g on the roll — meaning uncontrolled cost and an inconsistent product. Frozen dough eliminates this variable entirely. Short workflow: thaw, wrap, short proving (~20 min), bake, sell. Reduced staff: a shorter flow means fewer people per shift. Fixed raw material cost, to the cent, per unit. Up to 12 months frozen shelf life. Maximum standardisation across locations: every strand identical, wherever you operate.
The frozen dough is the right choice if you want maximum speed and simplicity, have little work space, and need standardisation across several locations. It costs a little more per unit than the mix, but eliminates the effort, the risk and the weight variation.
Vegetarian, egg-free and free of animal fats
Our recipe — both the mix and the frozen dough made from it — is vegetarian, contains no egg and no animal fats such as butter or lard. The only fat added during preparation is vegetable oil. A practical advantage for operations with specific requirements and for an increasingly ingredient-conscious audience.
The honest cost calculation
Many operators compare only the raw material price and conclude that making everything from scratch is cheaper. The calculation is incomplete, because it ignores the hidden costs of in-house production from scratch: labour time for kneading and dosing, training every new person, failed batches, spoiled raw material and overheads.
A correct calculation compares the full cost per unit, not just the ingredients. Here both of our products have a clear advantage: the yield is known from the start (about 110–120 pieces per sack of mix; fixed cost to the cent per frozen strand), losses are almost zero, and the time freed up flows into sales and service — that is, into revenue.
Who is it for? Café, foodservice, wholesale
The solution suits operators who want to sell chimney cake as a fixed part of their offer, without building a full bakery: cafés and foodservice businesses, stand operators, event and market catering, as well as multi-location operators who need consistent quality across all branches. Especially with several locations, standardisation is the decisive factor — only that way does the product taste the same everywhere. We supply operators in Germany and worldwide.
